Ingredients
- 1 jar (24 oz) of Mama's Classic Marinara
- 1 lb mixed seafood (e.g., shrimp, scallops, mussels, and/or calamari)
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 tsp red pepper flakes (adjust to taste)
- 1/2 cup dry white wine
- 1/4 cup fish stock or clam juice (optional, for extra seafood flavor)
- 1 lb linguine or spaghetti
- 1/4 cup fresh parsley, chopped
- 1 tsp fresh basil, chopped (optional)
- Salt and pepper to taste
- Lemon wedges for garnish
Instructions
-
Cook the Pasta
- Bring a large pot of salted water to a boil and cook the linguine or spaghetti until al dente. Reserve 1 cup of pasta water before draining. Set pasta aside.
-
Prepare the Seafood
- Pat the seafood dry and season lightly with salt and pepper. If using mussels or clams, scrub and debeard them beforehand.
-
Sauté the Garlic and Spices
- In a large skillet or saucepan, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes. Sauté until fragrant, about 1 minute.
-
Deglaze with Wine
- Pour in the white wine and fish stock (if using). Simmer for 2–3 minutes to reduce slightly.
-
Add the Sauce
- Stir in the jar of Mama's Classic Marinara. Let the sauce come to a gentle simmer.
-
Cook the Seafood
- Add the seafood to the sauce. Cover and simmer:
- Shrimp and scallops: 3–4 minutes
- Mussels and clams: 5–7 minutes or until they open (discard any that don't).
- Calamari: 2–3 minutes to avoid overcooking.
- Add the seafood to the sauce. Cover and simmer:
-
Combine Pasta and Sauce
- Toss the cooked pasta with the sauce and seafood. Add reserved pasta water, a little at a time, if the sauce needs thinning.
-
Garnish and Serve
- Sprinkle with fresh parsley and basil (if using). Serve immediately with lemon wedges on the side.
