Chicken Parmesan Recipe

Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts (pounded to an even thickness)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Italian-seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup vegetable oil (for frying)

For Assembly:

  • 1 jar (24 oz) of Mama's Classic Marinara
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp fresh basil, chopped (optional)

For Serving:

  • 1 lb spaghetti or your preferred pasta (cooked al dente)

Instructions

1. Prepare the Chicken

  • Preheat your oven to 375°F (190°C).
  • Set up a breading station with three shallow dishes:
    1. Flour.
    2. Beaten eggs.
    3. A mixture of breadcrumbs, grated Parmesan, garlic powder, oregano, salt, and pepper.

  • Dredge each chicken breast in flour, then dip in eggs, and coat thoroughly with the breadcrumb mixture.

2. Fry the Chicken

  • Heat the vegetable oil in a large skillet over medium heat. Fry the chicken in batches for 3–4 minutes per side, until golden brown and crispy. Drain on a paper towel-lined plate.

3. Assemble the Chicken Parmesan

  • Spread a thin layer of Mama's Classic Marinara in the bottom of a baking dish.
  • Place the fried chicken breasts in the dish. Spoon additional marinara over each piece to cover the top.
  • Sprinkle shredded mozzarella and Parmesan over the chicken.

4. Bake

  • Bake uncovered for 15–20 minutes, or until the cheese is melted, bubbly, and lightly golden. The chicken should reach an internal temperature of 165°F (74°C).

5. Cook the Pasta

  • While the chicken is baking, prepare your pasta according to package instructions. Drain and toss with the remaining Mama's Classic Marinara.

6. Serve

  • Plate the chicken over a bed of sauced pasta. Garnish with fresh basil if desired.
